I have never met a potato that I don’t like. This could raise some potential problems, but luckily you can have your potatoes and eat them too! Loaded Baked Potatoes are a great addition as a side dish to any meal. It can also be eaten as a main course with a nice side salad. I even make these, cut them in quarters after they are baked and use them as an appetizer. You can also make them ahead, keep them in the refrigerator for 2-3 days and bake when ready. No matter how you slice they are tasty!
Loaded Baked Potatoes
3 medium baked potatoes cooled*
1/2 cup Greek yogurt
3/4 cups of shredded cheddar cheese
8 slices of turkey bacon, cooked & crumbled
2 green onions chopped
Sea salt & pepper
Preheat oven to 400 degrees. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins.
Mash potato flesh in bowl with a fork. Add Greek yogurt, cheese, green onions, turkey bacon, salt, and pepper to potatoes.
Mix together thoroughly and scoop mixture evenly in potato skin shells. Place in heated oven and bake for 15 minutes.
21 Day Fix: One potato half = 1 1/2 yellow, 1/2 red, 1/2 blue *this is based off of using small to medium potato. Large potatoes would count as more.
