Healthy Slow Cooker Bananas Foster

I ate bananas foster once many years ago on vacation. I enjoyed it, but never thought about making it. It always seemed to something was extravagant or difficult to make for some reason. Maybe because of the showmanship behind it when I ate it. With a chef preparing it tableside and flames coming from the pan. No flames here though! When I realized how simple it was to make bananas foster I was shocked. I was even more shocked when I found this recipe through SkinnyMs. This slower cooker version is wonderful because there is really no fuss or muss about it. It is also a wonderful sweet treat without too many calories. This dish can be eaten by itself or top it with some coconut ice cream, used it as a topping for pancakes or waffles or in crepes. I love those dishes you can use various ways. Enjoy!

Healthy Slow Cooker Bananas Foster

5 firm bananas, cut into 1/2 inch chunks (do not use overripe bananas)
1 tablespoon coconut oil, melted
3 tablespoon organic honey
3 tablespoons lemon juice
1/4 teaspoon cinnamon
5 firm bananas, cut into 1/2 inch chunks (do not use overripe bananas)
1/4 to 1/2 teaspoon 100% Rum Extract (use amount you prefer)

Add banana slices to slow cooker. In a bowl combine the coconut oil, honey, lemon juice and cinnamon and then pour over bananas. You may need to melt the honey a bit in order to combine. Gently stir to make sure bananas are coated. Cover and cook on low 1 1/2 to 2 hours. Gently stir in rum extract at the end.
