I am using term healthy in quotes because this is as healthy as I can get this family favorite! lol Pepperoni rolls are one of my sons favorite foods. A lot of them can be drenched in grease and loaded with calories. I wanted to do a healthier option that I could occasionally eat or give my family without feeling completely guilty. This recipe has also become a great party, snack and lunch option for the kids.
Now let’s talk ingredients. First…the dough. I used frozen whole wheat pizza dough (Trader’s Joe Brand). You could also get the boxed kind, use frozen whole wheat bread dough, or even homemade if you have a recipe. Rhodes has a whole wheat dough you can buy, which is good, but I feel the pizza dough gives a better texture. I tried to find organic, but didn’t have much luck, so I choose the healthiest option made from whole wheat, which actually tasted really well. If you are limited on choices Walmart does sale whole wheat bread dough for a $1.00 in one pound bags where they sale their fresh pizzas in most locations. It is made with enriched flour, which for whole wheat purposes isn’t necessarily your first choice, but it is better than using the regular white.
The pepperoni….I used nitrate free turkey pepperoni by Applegate, which Giant Eagle and Target sale. I do shop at several stores, so it is no big deal for me to get things at different places, but if you are limited choose the best turkey pepperoni from the choices you have. I personally limit the amount of any type of processed meat I eat and try my best to do so with my family. But, I refuse to completely cut out foods we love, so when I do eat it, this is what I choose. These pepperoni rolls and turkey pepperoni isn’t something I eat weekly, but I definitely have it on here or there. I also like to watch my sodium, which is also why I don’t make this a “regular” food in my lifestyle. Let’s move on to recipe!
“Healthy” Pepperoni Rolls
1 pound of whole wheat dough (pizza or bread)
1 1/2 cups shredded mozzarella cheese
4 slices provolone cheese
1 – 5oz package of nitrate-free turkey pepperoni
olive oil spray (I use Pam organic olive spray)
Preheat oven to 375 degrees. Line a cookie sheet with parchment paper and spray with olive oil spray. Spread out dough a bit evenly. Divide the dough into 8 equal parts. Take a portion and flatten out a more to allow for the pepperoni and cheese. Add a half of slice of provolone cheese, about 7 slices of pepperoni (depending on brand/size) and sprinkle with mozzarella cheese. Fold the sides of the dough up, and starting at one end, fold the roll to the end (like a jellyroll) and pinch the sides close. Make sure to tuck and roll a bit so the cheese and pepperoni don’t pop out. Lay roll on cookie sheet, repeat the process till all 8 rolls are done. Spray again with olive oil spray and sprinkle with garlic powder and Italian seasoning. Bake for 25-30 minutes.
21 Day Fix: 1 roll = 1.5 YELLOW, .5 RED (these are not a normal part of my 21 Day Fix eating plan…..I treat them as a “treat” and have on occasion)
