Happy National Popcorn Day! Now this is one of those made up food holidays I can get behind because popcorn has always been one of my favorite snacks in the whole humble world. When starting 21 Day Fix last spring I was so pumped to find out I could eat popcorn on the program. When I stated eating clean, I also did some homework because I was aware of majority of corn being genetically modified. This is when I switched over to using organic popcorn. It does taste so much better and the price is really not that bad. Typically it is recommended to pop the popcorn yourself using a air popper or what not. My favorite way is actually on the stove top. You can either get a metal stove top popcorn popper like this one on Amazon (click here) or I just use a big stainless steel pot with lid. I also will buy plain organic microwave popcorn to use in a pinch. The best thing about popcorn is 3 cups of PLAIN popped popcorn equals one yellow on 21 Day Fix! That is a super filling and fun snack! Below I have my basic popcorn instructions along with some fun variations that you can have for treat days or some of them …anytime!
2 tablespoons coconut oil
1/2 cup organic popcorn
Sea salt to taste
Put oil and popcorn into the large stainless steel pot or popper over medium heat. If using popper turn crank slowly at first and then quickly once the popping starts. Stop cranking when no more popping is heard. If using stainless steel pot lightly swish and shake pot until popcorn starts popping, once it starts popping swish and shake a little harder until popcorn is popped. With both methods immediately remove popcorn from heat and place in bowl or we like to put it in a large paper bag and season
Once you have your popcorn popped, here are some great recipes to jazz it up!
APPLE PIE POPCORN
4 cups of popped popcorn
2 tbs. coconut oil, melted (extra virgin olive oil will work too)
1/4 tsp. vanilla extract
2 packets Stevia
1 tsp. apple pie spice
1/2 tsp. cinnamon
Put your popcorn in a large bowl; set aside. In a small microwave safe dish melt your coconut oil (approximately 15 seconds). Once melted mix in vanilla, Stevia, apple pie spice, and cinnamon. Pour over of your popcorn and mix with a large spoon/spatula. Once mixed evenly relax and enjoy your guilt-free snack!
21 Day Fix: 2 cups = .75 Yellow, 3 teaspoons
1/4 cup almond butter or peanut butter
1/2 cup honey
8-10 cups popped popcorn
*you will need to work quickly with this recipe, so make sure you know the recipe before actually doing it :). In a small pot, warm the honey on high heat. Bring it to a boil. Let it boil up in the pot about 1 inch and then quickly remove from heat. Stir in nut butter with a whisk and whisk until smooth. Should be “pourable”. Work quickly, pour over the popcorn and mix with a spoon because it will be very hot. Let it all sit and cool. Eat room temperature or cold.
21 Day Fix: Because of the amount of peanut butter/honey 1 Cup = 1 yellow
CHOCOLATE DRIZZLE POPCORN
I will make this as a quick sweet/salty treat. You can also add nuts for added texture and yumminess!
3 cups popped popcorn
2 tablespoons of chocolate chips
Spread popcorn on a wax paper covered platter or cookie sheet. Melt chocolate in microwave (about 10-20 seconds) and drizzle over the popcorn. Let it cool, harden and enjoy!
21 Day Fix: 2 Yellow
VANILLA ALMOND POPCORN
8-9 cups of popped popcorn
2 tbs. coconut oil
2 Medjool dates
2 tsp. vanilla extract
1 tbs. almonds
1 tbs. water
Preheat the oven to 325 degrees. In a food processor, combine the coconut oil, dates, vanilla, almonds, and water. Process until smooth, scraping down the sides as needed. In a large bowl, combine the popcorn with the sauce. Transfer to a large roasting pan and bake for 8 to 10 minutes, stirring every 2 minutes. The popcorn is done when all the pieces are no longer soggy. Cool on a wire rack, then store in an air-tight container.
21 Day Fix: 3 cups of popcorn = 1 yellow, 3 teaspoons, .25 blue
SALTY PEANUT BUTTER POPCORN
6 cups of popped popcorn
2 generous tablespoons honey
1/4 cup of natural peanut butter
pinch fine sea salt, to taste
Heat the peanut butter and honey on medium low heat until melted. Pour this mixture evenly over the bowl of popcorn and immediately stir with large spoons and toss like a salad until the popcorn is evenly coated. Sprinkle on the sea salt to taste.
21 Day Fix: 1 cup = 1 Yellow
8-9 cups air popped popcorn
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon chili powder
1/8 – 1/4 teaspoon cayenne pepper (optional)
2 teaspoons sea salt
Combine all spices, and salt in a small bowl. Blend seasonings and sprinkle seasoning over popcorn and toss to coat.
21 Day Fix: 3 cups = 1 yellow
BUFFALO RANCH POPCORN
12 cups popped popcorn
1 teaspoon granulated garlic
1/2 teaspoon dill
1/4 teaspoon cumin
1/2 teaspoon sea salt
4 tablespoons organic butter
2 teaspoons hot sauce
In a small bowl combine granulated garlic, dill, cumin, and sea salt. Set aside. In another bowl melt butter and add sauce sauce. Mix until combined. Toss butter with popcorn in a large bowl. Then toss with seasoning.
21 Day Fix: 3 cups = 1 Yellow, 3 teaspoons
ROSEMARY & PARMESAN POPCORN
16 cups popped popcorn
2 tablespoons olive oil or garlic infused oil
2-3 teaspoons chopped fresh rosemary
1 clove minced garlic (optional)
1/2 cup freshly grated parmesan
fresh ground black pepper
In a small bowl, whisk together the olive oil, minced garlic, and chopped rosemary. Pop the popcorn and place in a very large bowl. Evenly sprinkle the hot popcorn with the grated parmesan and toss to combine, then drizzle the rosemary olive oil over the popcorn. Season generously to taste with fresh coarsely ground black pepper and, if desired, add some additional sea salt.
