Healthy Breakfast Sausage

This quick and easy recipe replaces all that yucky mystery sausage.  It is lean, tasty and can be adjusted to your taste palette. You can form them in to patties, links or cook as crumbles. Cook ahead and use them all week for a quick breakfast protein. Use in wraps, omelets, casseroles, breakfast sandwiches and more.  Anyway you do it….it is yummy!

Healthy Breakfast Sausage
1 pound lean ground organic chicken or turkey
1/4 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried sage
1/2 teaspoon fennel
1 teaspoon crushed red pepper flakes (more or less to taste)
1 teaspoon of sea salt (or to taste)

Combine all ingredients in a large mixing bowl. Make sure that you mix the seasonings in well. Make sausage patties or links to desired size and thickness. Add patties or links to large nonstick skillet and cook on medium-high heat until brown and cooked through.  You make need to spray skillet with cooking spray since chicken/turkey has low fat content.  I usually get about 8-10 patties. Uncooked links, patties or crumbles can be frozen up to one month.

*For 21 Day Fix just measure out cooked sausage in a red container.
