Who doesn’t love chocolate? I was craving something chocolatey and through some trail and error with recipes and ingredients I had on hand these cookies or brownies if you will were born. I first made these as a cookie and loved them. They have a very brownie like soft texture. I forewarn to not give the kiddos one of these cookies and let them run off because you will be picking chocolate cookie from your carpet. This is when I decided to try them in brownie bite form. YEP…. that was the way to go for me. Loved them! Now, don’t get me wrong both ways are great but the making them in bite form was a bite easier to handle in my opinion, but either way is good! The totally hit the spot with the chocolate rage I was in and best of all it didn’t take me far off my 21 Day Fix eating plan!
Double Chocolate Brownie Bites & Cookies
1 cup of semi-sweet chocolate chips, (1/2 cup melted and 1/2 cup separate not melted)
1 3/4 cups almond flour
1/2 cup natural unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 stick organic butter, cubed in small pieces
1 cup coconut sugar (or organic sugar)
2 large eggs
1 teaspoon vanilla extract
Preheat oven to 350 degrees. In the bowl combine the almond flour, cocoa, baking soda, salt and sugar blend together well (you can even pulse it together in food processor if you prefer to make almond flour less grainy and it is actually easier to mix). Add the cubed butter and mix (or process if using the processor) until the dough resembles coarse cornmeal. Add the eggs vanilla and 1/2 cup melted chocolate (you can melt in microwave). Mix until the dough is smooth and it will resemble thick brownie batter. Fold in chopped chocolate.
Cookies: Drop dough by heaping tablespoons on parchment lined cookie sheets. Bake 8 -10 minutes until set and rotating sheets halfway through. The cookies will not be crisp. Let them cool a little on the sheet and gently (they will fall apart easy if not careful) and let cool on drying rack. This will stiffen them up a bit, but they are soft cookies.
Brownie Bites: Put a heaping tablespoon in a mini muffin tin and fill each hole. Bake 10-12 minutes until set and rotating halfway through. When I took the brownie bites out the edges were higher than the middle. I gently pushed them down to even the brownies out and let them cool in the pan. Once cooled I popped them out with a fork and they were ready to go! I garnished a couple with coconut whip cream and cocoa for the kiddos.
21 Day Fix: 2 small bites = 1 yellow or 1 large/2small cookies **These are considered treats! Save them for treat day!**
