Chicken Parmesan is one of my favorite meals. I love the homemade version and even sandwich versions. When I started my healthy living journey I came across various recipes for meat “muffins” including Italian versions. This made me think of creating a version using ground chicken to mimic one of my favorite all time meals. I absolutely loved how they turned out and they are great to make ahead or even freeze. Chicken Parmesan Bites
1 pound ground chicken breast
1 large egg
1/4 cup whole wheat breadcrumbs
1 tablespoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 cup Parmesan cheese
3/4 cup pasta sauce (low sugar)
3/4 cup shredded Mozzarella cheese
sea salt & pepper
Pre-heat the oven to 350. Spray muffin tin with cooking spray and set aside. In a large bowl, combine the ground chicken, egg, breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt/pepper to taste and lightly mix together. Fill a 12 cups the prepared muffin tin evenly with meat mixture. Spread the pasta sauce evenly over the tops of each muffin. Bake for 20 minutes and remove from the oven. Top each muffin with about a tablespoon of shredded cheese and then return to the oven for 2-3 minutes until the cheese is melted. Garnish with parsley or basil if desired.
