Cannoli Stuffed Strawberries

This recipe came about out from wanting some form of stuffed strawberry.  I was going to attempt a cheesecake strawberry at first, but was really in the mood for a touch of chocolate, which somehow lead me to think of cannoli’s ….then it hit me, why not stuff a strawberry with a cannoli inspired filling? Cannoli Stuffed Strawberries were born! These little treats are not overly sweet, but sweet enough to solve a sweet tooth without expanding your waistline. It is also 21 Day Fix compatible! My family cleared out a batch of them in no time! You can even use the filling as a dip and serve with graham crackers and strawberries on the side. I had a little filling left over from my batch and we ate it on graham crackers. Sooo good!

Cannoli Stuffed Strawberries
2 cups of halved & hulled strawberries
2/3 cups of ricotta cheese
2/3 cups of Greek yogurt cream cheese, softened*
1 teaspoon vanilla
4 teaspoons stevia
4 tablespoons of mini chocolate chips
1 whole grain graham cracker, crushed

Place cream cheese in mixing bowl or mixer and cream until smooth. Add ricotta cheese (make sure liquid is drained), vanilla, and stevia blend until smooth. Stir in chocolate chips. Place strawberries on plate and using teaspoon or pastry bag fill each strawberry with mixture. Garnish with crushed graham crackers.

NOTE: Filling could be used as a dip for fruit and/or graham crackers. *If you can not find greek yogurt cream cheese, you can substitute low fat regular cream cheese.

21 Day Fix: 6 small to medium strawberry halves with teaspoon of mixture in each = 1 YELLOW (treat days!)
