Buffalo chicken bites are a staple in my house. I will make this yummy bites of chicken and use them for wraps, salads and more. This recipe derives from a recipe I found and added my own spices and method. This is one of those dishes that everyone in my family eats and asks for.
Buffalo Chicken Bites
1 pound boneless chicken breasts, cut into bite-sized pieces
2 eggs beaten
1 tablespoon low sodium season salt
1 cup of whole wheat flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper
1/2 teaspoon paprika
1/2 teaspoon sea salt
1/2 teaspoon pepper
1 tablespoon coconut oil, melted
1 cup Frank’s Red Hot Sauce
Preheat the oven to 400. Place chicken in a bowl and season with season salt. Pour beaten eggs over chicken and stir. In a shallow dish add flour and garlic powder, onion powder, cayenne pepper, paprika, sea salt, pepper and combine.
Spray a baking sheet with cooking spray. Using fork or tongs, take a few pieces of the egg coated chicken from bowl and dredge into season flour mixture to lightly coat. Place on baking sheet and repeat process with remaining pieces of chicken. Once chicken is completely coated on baking sheet spray the chicken with cooking spray to ensure it browns when baking.
Bake for 9-12 minutes and then flip and cook the other side for another 9-12 minutes, or until golden brown. When chicken is cooked through and brown take out of oven. In a small bowl combine hot sauce and melted coconut oil. Drizzle hot sauce mixture over chicken, while gently tossing to fully coat. Eat up and enjoy!
