My family is a huge fan of broccoli and when you add cheese it even better. This is a delicious and quick recipe that combines both. You can use this for a side dish or even an appetizer. The recipe instructs to use a regular size muffin tin, but you can even use mini muffin tin and create little “bites” for a party or gathering!
Broccoli Cheese Cups
2 cups broccoli, cooked and chopped in small pieces
1 cup cheddar cheese
14 whole wheat crackers, crushed (I used a whole wheat Ritz version)
Sea salt, pepper, onion powder
Preheat oven to 350 degrees. Combine broccoli, cheese, crushed crackers, and egg in a mixing bowl until everything is well combined. Season lightly to taste with sea salt, pepper and onion powder. Spray muffin tin or silicon molds with non-stick baking spray. Spoon mixture into evenly into 12 equal muffin tin holes. Bake at 350 degrees for 12-15 minutes or until slightly browned and fully cooked. Serve hot or room temperature as a side dish or appetizer.
