Banana Bread

Today’s recipe post comes courtesy to the fact that I had a large bunch of over ripe bananas I need to use. I didn’t want to waste them and my family asked for Banana Bread. This recipe was found through 100 Days of Real Food, which offers some great recipes. The only addition did was some cinnamon since I am a big cinnamon fan. The cinnamon added a warm flavor, but not over powering with cinnamon taste. Feel free to omit if you are not a fan. Since I had a lot of bananas I doubled the recipe and threw in about a 1/4 cup of mini chocolate chips in the one loaf. Overall this recipe was a hit and my family had no clue what they were eating was healthy. I was happy how it turned out and it was incredibly moist. This is a keeper!!

Banana Bread
2 1/4 cup whole-wheat flour
3/4 teaspoon baking soda
1/4 teaspoon sea salt
3 ripe bananas, mashed
1/4 cup plain Greek yogurt
1/4 cup honey
2 eggs
1/3 cup coconut oil
1 teaspoon vanilla
1/2 teaspoon of cinnamon

Preheat oven to 350 degrees and spray pan with baking spray. Mix together the flour, baking soda, and sea salt. In a separate bowl mix mashed bananas, then mix in Greek yogurt, honey, eggs, coconut oil, cinnamon and vanilla. Fold the banana mixture into the flour mixture until blended. Pour batter into prepared loaf pan. Bake for 40 – 50 minutes or until it comes clean with a toothpick.

21 Day Fix: 1 slice = 1 Yellow (Each standard loaf is 10 nice size slices) *if you add chocolate chips I would limit this to “treat”, which you are allowed 3 on 21 Day Fix.
