“21 Days of Fix” is a series highlighting one meal a day that I eat on the 21 Day Fix Program. The purpose of this series is to show the easiness and flexibility of the program, portion sizes, along with meal inspiration.
I was in the mood for a nice heartier breakfast and decided to incorporate the leftover peppers and potatoes from last nights dinner into my breakfast. This was so filling that I ended up finishing the yogurt and fruit as a mid-morning snack.
Day Two – Tuesday June 23, 2015 – Breakfast
2 Eggs – 1 RED
Greek yogurt – 1 RED
Roasted Potatoes – 1 YELLOW
Green & Red Peppers – 1 GREEN
Strawberries – 1 PURPLE
Not Shown: 1 TEASPOON (coconut oil for eggs)
